Nothing brings Fall to mind for me more than pumpkins (which we harvested a few weeks ago!). And with a lazy Sunday morning coming up tomorrow what could be better than a tasty batch of pancakes to start the day? So here's a recipe that I got to try out for the first time at the Mizpah Hut while I was up in the White Mountains and I IMMEDIATELY fell in love. I may have lost count of how many I inhaled that morning.

Ingredients: 
1/4 cup of flour
2 tbsp sugar
2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp ginger
1/2 tsp salt
1/8 tsp nutmeg
pinch of cloves
1 cup of milk
6 tbsp of pumpkin
2 tbsp of butter
1 egg

Mix all together, slap it on a frying pan, and cook 8-10 pancakes! 
Top the finished product with New England's finest maple syrup, or some peanut butter and your tummy will be thanking you! Bon appetit!
